JIM'S NOTES


NOSE: Sweet Corn  |   Toasted Grain  |  Orange Peel  |  Toffee

TASTE: Corn  |  Hot Spice  |  Toffee Sweatness  |  Green Grass

FINISH: Medium finish, Alcohol Hotness, Grain, with some Oak

SHARE WITH: Curious bourbon drinkers, interested in a unique four-grain expression.  Early in the tasting, not a closer.

WORTH THE PRICE: I think $60 is a high price for this very young expression.  It has some interesting notes but is not at the level of some excellent bourbons at and even below this price point.

BOTTLE, BAR OR BUST: At this price, I would put this one in the Bar category.  A good idea to try it before you buy.  I could see some people being attracted to some of the interesting flavors and sweetness in this young expression.  For me, it is outside of my preferred tasting profile.   I say that this bourbon is definitely not a bust.

OVERALL: This is a rebranding of the original Rabbit Hole Straight Kentucky Bourbon reviewed in 2018 by Matt Self and Pops (Rabbit Hole Bourbon Whiskey).  A young bourbon without the complexity you would expect from the mash bill.  Definitely drinkable with some interesting flavors, would be curious to try an older version of this bourbon.  I believe it has some elements that would benefit from more time in the barrel.

All that being said, after being acquired by to Pernod Ricard when they rebranded this product they added another $5 to the price. I am not sure the “Cavehill”, after Louisville’s historic Cave Hill cemetery, is worth a fin.
